The kitchen commis chef is new to the business or has little experience within it, being fresh out of school or simply because he/she wants to learn to be a chef. He/she must be flexible with a strong desire to learn and the ability to follow directions. He/she is responsible for much of the setup (breakfast, snacks and tastings, aperitif, parting gift, etc.) and must have ideas to work with. He/she also helps to serve lunch to participants and must enjoy being cheerful and interacting with others.
